Peeling a large batch of Russet potatoes can be slow. A shallow score before boiling and a brief ice bath lets the loosened thick skin slip away.

How to Score, boil, shock, and slip off skins

  1. Choose thick-skinned Russet potatoes and score each shallowly around its equator.
  2. Boil the potatoes whole until tender.
  3. Transfer with tongs to ice water for about 30 seconds, or until cool enough to handle.
  4. Twist and pull the loosened skin away.

Why it works

Cooking loosens the thick Russet skin along the score line; brief cooling makes the potato safer to handle without a peeler.
