Infuse Cream, Then Strain for Cleaner Flavor

A cook strains aromatic-infused cream from a saucepan into a clean bowl.

Daily Kitchen Note

Ground aromatics can leave flecks or harsh pockets in whipped cream. Steep a tested quantity in warm or cold cream, strain out the solids, and chill before whipping.

How to Steep aromatics in cream, then strain

  1. Choose a tested cream infusion and measure its clean, edible aromatic ingredients.
  2. For a hot infusion, heat the cream only until bubbles appear at the pan’s edge, add the aromatics, remove from the heat, and cover; use the recipe’s cold-infusion method when directed instead.
  3. Steep for the tested recipe’s time.
  4. Strain through a fine-mesh sieve, discard the solids, and refrigerate until cold before whipping or using.

Why it works

Cream’s water and fat extract different aroma compounds, while straining removes the flavoring solids so the finished cream stays smooth.
