Sea Salted Vanilla Bean Gelato

Ingredients:

  • 2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup sugar
  • 1 vanilla bean (split)
  • 3 egg yolks
  • Flaky Sea Salt for garnish

Instructions:

  1. Prepare the Base: In a saucepan, heat the whole milk, heavy cream, sugar, and split vanilla bean over medium heat until warm. Stir occasionally to dissolve the sugar.
  2. Whisk the Egg Yolks: In a separate bowl, whisk the egg yolks until smooth. Gradually add the warm milk mixture to the yolks, whisking constantly to avoid curdling the eggs.
  3. Cook the Custard: Pour the mixture back into the saucepan and cook on low heat, stirring constantly, until it thickens slightly and coats the back of a spoon.
  4. Chill the Mixture: Remove from heat and let the mixture cool to room temperature. Once cooled, chill the mixture in the fridge for at least 4 hours, or overnight for best results.
  5. Churn the Gelato: Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  6. Serve and Garnish: Serve the gelato in bowls and sprinkle with Flaky Sea Salt for a sweet and salty finish.
