Prevent Avocado Browning With a Squeeze of Lemon

Daily Kitchen Note

Cut avocados quickly turn brown when exposed to air due to oxidation. Applying a little lemon juice and wrapping tightly can slow this process and keep the flesh green longer.

How to Squeeze lemon juice

  1. Wash the outside of the avocado thoroughly before cutting.
  2. Cut the avocado and use the desired portion.
  3. Squeeze fresh lemon or lime juice over the exposed flesh of the remaining half.
  4. Wrap tightly in plastic wrap, ensuring no air gaps, and store in the refrigerator.

Why it works

The acidity in lemon juice lowers the pH on the surface of the avocado, which slows down the enzymes responsible for oxidation and browning. Wrapping it tightly further limits oxygen exposure.
